Bacon and Apple Stuffed Winter Squash

photo-2I remember being really impressed when my husband Joe, made this Stuffed Butternut Squash recipe. Now I realize how easy it is to make! You can never go wrong with an easy dish that looks like hard work 🙂 If you can find grass- fed beef, I recommend getting it.

If you’re trying to make this look impressive, do the steps listed. If you don’t care about how it looks, I would consider just scooping all the contents out of the squash and mixing with the beef. You could just skip the step of putting the stuffing back in the shell and baking again. The filling is so good on its own!  This recipe is super easy, but it does take some prep time to roast the squash. You can certainly throw the squash in the oven the night before, to avoid the waiting time. Once the squash is cooked, you’re looking at 20-30 mins.photo-2

Consider pairing with a green veggie of your choice, or a simple salad. Minus the stuffing in a shell part, I bet you could do this with mashed sweet potato or pumpkin as well.
