Super Easy Crockpot Pulled Chicken

You won’t find an easier recipe than this! It calls for chicken, salsa, shredded carrots and some seasoning. That’s it! This crockpot pulled chicken is so versatile. Feel free to half the recipe if you don’t want to freeze it or eat leftovers for a few days. We usually enjoy this as part of a “bowl” situation. We like to have rice, quinoa or cauliflower rice (or a mix of two of those) and top it with more salsa, avocado and cheese. We also make tacos or quesadillas on corn tortillas. In the summer, we put this on top of some mixed greens.

Super Easy Crockpot Pulled Chicken

Ingredients:

  • 1 cup shredded carrots (can also buy pre-shredded)
  • 1 thin sliced or shredded onion
  • 2-3 # whole chicken breast or thighs
  • 16oz jar of salsa
  • 1/2 Tbs paprika
  • 1/2 Tbs garlic powder
  • 1/2 Tbs chili powder
  • 2 tsp salt
  • Frozen chopped spinach
  • 1/2 cup pasta sauce (optional)

Instructions

  1. Toss everything in the crockpot and stir
  2. Cook on low for 6 hours
  3. In last 20 mins, add frozen or fresh spinach
  4. If possible, take the top off for the last hour or more, so some of the water can evaporate
  5. With two forks, pull apart the chicken and mix everything together
  6. Top with avocado, guacamole, cheese, cilantro, olive oil, etc

Serving ideas: stuff into a corn tortillas, put on top of a green salad, spaghetti squash, cauliflower rice or regular rice.
